Easy Tiramisu Recipe

Tiramisu is a popular no-bake Italian dessert meant to feed a crowd. Ladyfinger cookies are dipped in coffee then layered with a sweetened mascarpone cheese filling. The final touch is a sprinkling of cocoa powder on top.

Tiramisu

Tiramisu is a classic Italian dessert that has a sweet pick me up! Crispy ladyfinger cookies are individually dipped in a mixture of coffee and rum to make the cake-like base. A light and sweetened mascarpone cheese mixture is added in between the ladyfinger layers. A generous dusting on top with cocoa powder adds a stunning surface. It’s an easy dessert to make a day or two in advance that’s kept in the refrigerator.

How do you make tiramisu?

  • Cook the egg yolks, sugar, rum, and vanilla over a water bath until thickened.
  • Gently combine egg mixture with mascarpone cheese, and then whipped cream.
  • Quickly dip the ladyfingers in the coffee and rum mixture. Layer enough to fit in an 8 by 8-inch baking dish.
  • Spread half of the cheese mixture over the ladyfingers.
  • Make another layer of coffee dipped ladyfingers.
  • Spread the rest of the cheese mixture on top.
  • Generously dust the tiramisu with cocoa powder.

What kind of coffee can be used?

Any type of strong coffee works well or freshly brewed espresso. I’ve also used cold brew coffee which makes a really convenient ingredient since you don’t have to let it cool down. Make sure to use cold or room temperature liquid, otherwise, the cookies will get mushy when dipping.

What types of cookies are used?

Ladyfingers are used for tiramisu. They are very light and crispy, they snap when broken in half because they are very dry. When dipped in liquid they quickly absorb it. Make sure to dip each side no longer than a few seconds. The texture turns moister and cake-like after it sits for several hours.

Do you have to use alcohol?

No, it’s completely up to you if you want to omit it from the recipe. It will still be delicious, and have a wonderful strong coffee taste. Other alcohol options are Grand Marnier, brandy, any coffee liquor, or marsala wine.

How long do you have to wait to serve?

Wait at least 8 hours before serving the desert. Make it in the morning for dessert later in the evening, or it holds up very well for up to 2 days in the refrigerator. Let it sit at room temperature for at least 20 minutes so the cheese filling slightly softens. The texture will be more smooth and creamy.

Ingredients

  • 1 cup strong coffee or espresso at room temperature
  • ¼ cup dark rum divided
  • 3 large egg yolks
  • ½ cup granulated sugar divided
  • 1 teaspoon vanilla extract
  • 8 ounces 1 cup mascarpone cheese, chilled
  • ¾ cup heavy cream
  • 24 ladyfinger cookies 7-ounce package
  • 2 tablespoons cocoa powder for dusting

Instructions

  • In a shallow bowl combine coffee and 2 tablespoons rum.
  • Add egg yolks, 2 tablespoons rum, ¼ cup of sugar, and vanilla into a medium heatproof bowl.
  • Set the bowl on top of a saucepan filled with about 1-inch of water. Bring the water to barely a simmer, making sure that the bottom of the bowl does not touch the water.
  • Vigorously whisk the egg mixture until it is light and foamy, and about triples in volume, about 5 minutes.
  • Add mascarpone cheese to the egg mixture and whisk until the mixture is smooth.
  • In a separate bowl, whisk the heavy cream and ¼ cup sugar on medium speed until medium peaks form.
  • Gently fold ⅓ of the whipped cream mixture into the mascarpone mixture. Add the remaining whipped cream, and fold until just combined.
  • Quickly dip enough ladyfingers, about 2 seconds per side, to cover the bottom of an 8-inch square dish. Feel free to arrange the cookies anyways that they best fit in the dish.
  • Add half of the mascarpone mixture to the dish and evenly spread over the dipped ladyfingers.
  • Dip the remaining ladyfingers in the coffee, arrange on top of the cheese mixture.
  • Spread the remaining mascarpone cheese over the ladyfingers in an even layer.
  • Sprinkle some of the cocoa powder evenly over the tiramisu. Clean the edges of the dish. Cover with foil and refrigerate for at least 8 hours or up to 2 days.
  • Allow tiramisu to sit at room temperature for 20 minutes before cutting. Sprinkle with more cocoa powder right before serving.

I love how easy this recipe is and that I have these 8 cans on hand at any given time. Add it all together and create one amazingly easy dish that is thrown into a stove top pot or slow cooker. As the taco soup is cooking the flavors begin to combines creating an irresistible soup. It is thick, rich and chunky! This taco soup is fresh and comforting in every bite!

Chicken Taco Soup Ingredients:

Each ingredient is one that you can have already in the pantry. It is simple to make and a tried and true favorite chicken taco soup. Only 8 cans to open, drain and dump into the pot. It is that quick and easy to make! I love all the smells this soup brings into my kitchen and how fresh it tastes after a few minutes of boiling. This recipe is one to make over and over again!

  • Tomatoes: Diced in a can and add it in the soup.
  • Corn: Drain the corn and add to the pot.
  • Black Beans: First drain and rinse the beans well to make sure the salt is washed off.
  • Pinto Beans: Adds the extra thickness that are creamy.
  • Cream of Chicken Soup: Thick soup mixed with small chicken bites. All ready to be added to the soup once opened.
  • Chicken Breast: Tender chicken in a can that is ready in minutes. Drain and add it in!
  • Green Enchiladas Sauce: Bring on some spice with this enchilada sauce.
  • Chicken Broth: A savory liquid that fills this soup with chicken flavoring.
  • Homemade Taco Seasoning: My homemade taco seasoning is so good and easy to make. Make ahead of time and store for 3 months!

How to Make Chicken Taco Soup:

Try this chicken taco soup with 8 cans and taco seasoning to make one AMAZINGLY delicious soup.  All the flavor you know and love with the comfort of family around your dinner table. Smell all the cans blend together in less than 30 minutes!

  1. Add all the ingredients: In a large pot add the diced tomatoes, corn, black beans, pinto beans, cream of chicken, chicken breast, green enchilada sauce, chicken broth, and homemade taco seasoning. 
  2. Cook taco soup: Bring to a boil and reduce to a simmer over medium heat.  Let simmer for 5 minutes and serve with desired toppings.

How to Make Taco Soup in a Slow Cooker:

Two ways to make this delicious taco soup recipe. On the stove top or in a slow cooker. Make it even easier having the slow cooker do all that work. Simply add all the ingredients into the slow cooker and stir together. Cook on low heat for 2 to 3 hours or until warmed through. Serve with all your favorite taco soup toppings!

Breakfast Burritos that are Freezer Friendly!

Breakfast Burritos are a great way to plan breakfast ahead. These are packed with ham, eggs, cheese and a lot of add-ins like pico de gallo, hash browns etc.

If you are not a breakfast person, you’ll love breakfast after you try these breakfast burritos! They are incredibly easy to make, you can make a big batch and freeze them ahead. So if you have a large family that needs to be fed, you don’t need to spend mornings making breakfast anymore. Just prep them over the weekend, and you have breakfast ready during the week. Plus, I’m going to give you a ton of ideas on how you can make them a little bit different.

Freezer Friendly Breakfast Burritos

We love breakfast burritos because you can so easily make them your own. And they are a great way to break up the monotony of having eggs or cereal every day.

I make these breakfast burritos a ton of different ways. The ones pictures here are filled with turkey ham, scrambled eggs, pico de gallo and lots of melty cheese.

Let’s talk about all the different things that can make these burritos even more awesome.

Storing and using Tortillas

We like using 8 inch flour tortillas, but you can also use a larger size if you prefer. Try to open a fresh batch of tortillas and use them for these burritos because they are the easiest to roll. But if you have slightly oder tortillas, stack them between slightly damp towels and microwave them for 20-30 seconds and they’ll come right back to life!

Filling Ideas

We love using slices of ham as the first thing on these tortillas. It keeps the tortilla from getting wet and acts like a barrier between the rest of the filling and the tortillas. Other filling ideas include:

  • scrambled eggs
  • onions and mushroom
  • bacon
  • tomatoes
  • spicy sausages
  • chopped bell peppers
  • hash brown potatoes
  • black beans
  • refried beans

And CHEESE of course!

Start by prepping and cooking everything. Then get the family together, and roll these breakfast burritos together. Kids can decide what they want or don’t want in their burritos. As you roll these out, you can wrap them in foil or parchment paper and write the ingredients on top so that you can easily identify whats in them. Then just transfer them to a gallon sized ziplock and freeze them, or consume them immediately. To reheat, unwrap them and microwave them for a minute or two till they are warm and the cheese has melted inside.

Breakfast Burritos

Easy breakfast burritos that are filled with scrambled eggs, ham, pico de gallo and lots of cheese. Freezer friendly and can be made ahead.

Ingredients

  • 8 8 inch Flour Tortillas
  • 2 tablespoons Butter
  • 12 large Eggs
  • 1/4 cup Sour Cream
  • 1/2 teaspoon Salt
  • 1/2 teaspoon black Pepper
  • 8 slices Deli Ham
  • 1 1/2 cups Pico de Gallo
  • 1 1/2 cups grated Cheddar

Instructions

  • Whisk together eggs, sour cream, salt and pepper. Heat butter in a non stick skillet and add the whisked eggs. Stir the eggs and scramble till they are cooked (approx 2-3 minutes). Remove from the pan and set aside.
  • To assemble the tortillas, place a slice of deli ham on a flour tortilla. Add approx 1/2 cup scrambled eggs, 1-2 tbsp pico de gallo and sprinkle with cheese. Don't overstuff them or they will be difficult to roll.
  • Roll the burritos from bottom to top. Roll one end of the tortilla over the filling, fold the sides over and continue rolling till you reach the top, tucking the filling in as you go. Repeat till all the burritos are filled.

Notes

  • To make pico de gallo, mix together chopped tomatoes, onions, garlic, jalapenos, lime juice, chopped cilantro and salt.
  • Store these burritos by wrapping them in parchment paper or foil
  • If freezing these burritos for later, skip the pico de gallo, and replace it with sauteed mushrooms, hash browns or sausage

Creamy Avocado Yogurt Dip

This creamy avocado yogurt dip is one of the best dips that I have EVER had!  Creamy, healthy, and full of flavor, you won’t be able to get enough!
Avocados are on sale frequently and have all the flavor plus good stuff to eat often! Enjoy more avocado dips like this California avocado dip that is chunky and full of flavor that makes this another dip to love.

Creamy Avocado Yogurt Dip

After being on a 30 hour roadtrip back to Utah, I couldn’t wait to get back into the kitchen! I am trying to choose healthier snacks lately and this dip sounded delicious. You use Greek Yogurt in it which is Fat free! And all of the ingredients in this are amazing. And it was so easy to make. I loved being able to eat this delicious avocado dip with a few whole wheat chips and stay within my calories!

Ingredients for Avocado Yogurt Dip:

  • Ripe Avocados: Smash them into a bowl mixed with the seasonings and yogurt.
  • Plain Fat-Free Greek Yogurt: Rich and creamy with out the fat is the best way to go when picking the yogurt for this recipe.
  • Garlic: Add garlic in for flavor.
  • Garlic Powder: Tasty seasoning to add a little more garlic.
  • Chopped Fresh Cilantro: Perfect for holding
  • Ground Cumin: An earthly tone and flavoring that is not overpowering.
  • Lime: juice from a fresh lime. 
  • Salt and Ground Black Pepper: Just a pinch!

How to Make Creamy Avocado Yogurt Dip:

  1. Mix ingredients together: In a medium sized mixing bowl add the avocado and greek yogurt.  Mash until it is combined and to desired consistency.  Add in the garlic, cilantro, cumin, lime.  Mix until smooth.  Salt and Pepper to taste.

Store this avocado yogurt dip in an air tight container and place in the refrigerator for 2 to 3 days long.

This avocado yogurt dip is simple and easy to make. Simply add seasoning to the yogurt and avocados then experiment your favorite seasoning mixes each time you make it. Add a little more spice with paprika, cayenne or red pepper flakes or balsamic vinegar for a savory yogurt and even a hint of lemon juice to sweeten the dip up.

How Do You Keep Avocado from Turning Brown?

The citric acid from the lime juice is a strong antioxidant that will help slow the browning process down once it is mixed together. This does not take away all of the browning but it will help eliminate it for at least 1 to 2 days long.
