So many varieties of fried rice can be made. These better than takeout fried rice recipes are a collage of all my favorites!

Chicken fried rice in a skillet.

Chicken Fried Rice

I mean really. Who doesn’t like fried rice? Ok maybe my six year old doesn’t because of the veggies inside, but I am pretty sure he is the only one out there. 🙂 For my birthday dinner with my family I chose to go to our favorite little chinese restaurant. And it was the bomb. But their fried rice was excellent. But I kept thinking, I can make this just as good at home and I have been craving it ever since!

Since I learned a few awesome tricks on how to get the perfect fried rice in my recipe here, I wanted to make a big old batch for myself for lunch. The baby was craving it that day. But I thought, why don’t I add in some protein and make a meal out of it. You guys. The chicken gave it such amazing flavor! I really couldn’t believe how good it turned out. I promise that you can stay at home and have this better than take out chicken fried rice. You will really be impressed with yourself.

Get Ready to Make Some Rice:

  • Vegetable Oil: This helps with cooking the chicken and adding flavoring at the same time.
  • Soy Sauce: Chinese favorite sauce that is authentic and brings rich flavoring.
  • Chicken: Cut into small pieces and add into the skillet or wok.
  • Cooked Rice: It is best to have already cooked rice that has been cooled in a refrigerator.
  • Sesame Oil: Brings in a subtle and rich flavoring.
  • Onion: Small white onion chopped up.
  • Peas and Carrots: Frozen vegetables work best then leave them overnight to be thawed.
  • Soy Sauce: More of this delicious sauce!
  • Eggs: Lightly beaten and added in the wok.
  • Green Onions: Chopped and sprinkle in for added texture, color and flavoring!

Cooking Fried Rice:

  1. Cook in a skillet: In a large skillet or wok, add vegetable oil and soy sauce. Add in the chicken and cook until lightly brown and cooked throughout. Remove and set aside.
  2. Add oil and vegetables: Pour sesame oil in the bottom. Add white onion and peas and carrots and fry until tender.
  3. Pour egg mixture: Slide the onion, peas and carrots to the side, and pour the beaten eggs onto the other side. Using a spatula, scramble the eggs. Once cooked, mix the eggs with the vegetable mix.
  4. Stir in remaining ingredients: Add the rice and chicken to the veggie and egg mixture. Pour the soy sauce on top. Stir and fry the rice and veggie mixture until heated through and combined. Add chopped green onions if desired.

The Recipe Critic Pro Tip:

I cooked my chicken in this teriyaki sauce recipe here. It added amazing flavor to the chicken and it just shredded apart. Other wise, you can boil your chicken, or even cook it in a medium skillet until no longer pink.

The process of making chicken in a wok. First cooking the chicken, then cook peas and carrots next add eggs and rice then mix together.

Tips for Making the Best Fried Rice:

Enjoy making the this fried rice using these tips to help accomplish the authentic Chinese taste. It is simple to make and comes together quickly and easily. Once you make it you will be making it over and over again!

  • Cold Rice: To make the best rice you have to plan a little bit ahead of time. Chilled cooked rice is the best way to use up left over rice as well as fried rice. Rice that is cooked and still warm does not cook well when making fried rice. It tends to turn out mushy and very sticky.
  • Make Cold Rice: If you are on a time crunch and craving fried rice simply place the warm rice on a sheet pan and stick it in the refrigerator for 30 to 45 minutes or until cold. For an even quicker remedy, place the rice in the freezer for 10 to 15 minutes long. Just enough for it to chill but not be frozen.
  • High Heat: It is best to cook on high heat to help fry and brown the rice and veggies throughly. Try not to have the rice steam in the pan or stick together too much. Stir frequently.
  • Soy Sauce: Add in extra soy sauce towards the end as you are trying the fried rice as you are cooking it. A light soy sauce is what I prefer for flavor.

Variations:

Try new things and mix it up with all these new and fun variations when making the best fried rice recipe. The best part is using up the leftover rice. Find more left overs that can be added into this chicken fried rice recipe to make it easier. Mix and match ingredients and create more delicious flavors of rice.

  • Protein: Mix up your protein with ham, shrimp, bacon or enjoy it with vegetables.
  • Oil: Instead of adding in all the oils, butter is just as great! Add in butter to create a rich, flavorful taste.
  • Rice: It is best to have cold or chilled rice for this recipe. Quinoa or long grain rice are great ways to enjoy a variety.
  • Vegetables: Create a combination of a few to several of your favorite vegetables to enhance this recipe. Broccoli, cauliflower, snap peas or water chestnuts are great vegetables to add in.

Carrot Cake Cupcakes

Carrot Cake Cupcakes

There is something truly incredible that happens when you combine grated carrots with classic cupcake ingredients. Like zucchini bread, you won’t eat carrot cake cupcakes and think vegetables. Instead they are just super moist, perfectly sweet and spiced cupcakes with a tangy smooth cream cheese frosting and chopped pecans sprinkled on top for a little crunch.

It’s a great little handheld dessert that is perfect if you don’t want to go to the trouble of making a full-size stacked carrot cake. This recipe is so easy you can make it by hand!

What you need to make carrot cake cupcakes

The cupcake ingredients:

  • Sugar: I like a mix of granulated sugar and light brown sugar for extra flavor in these cupcakes.
  • Eggs: These are a binding agent that help hold the cake together.
  • Canola oil: Oil keeps cupcakes moist for days, although you could substitute butter if you need to.
  • Vanilla extract: Be sure to use pure vanilla extract, not imitation.
  • All-purpose flour: I find that cake flour is too light and doesn’t hold up to the shredded carrots in these cupcakes.
  • Baking powder and baking soda: For leavening so the cupcakes rise and dome beautifully.
  • Salt: Just enough to bring out the other flavors in the recipe.
  • Warm spices: Cinnamon, nutmeg, ginger, and cloves are perfectly balanced so they don’t overwhelm the flavor of these cupcakes.
  • Finely shredded carrots: Don’t use preshredded carrots from the store. They are too thick and too dry for these cupcakes.

The cream cheese frosting:

  • Cream cheese: Obviously!
  • Butter: I prefer using salted butter in this frosting recipe.
  • Powdered sugar: Just the right amount so the frosting isn’t cloyingly sweet.
  • Vanilla extract: For the best flavor.
  • Coconut extract: Just a little bit of this gives the cream cheese frosting that something extra that we love.

How to make carrot cake cupcakes

Make the cake

  1. Prep a 12-cup muffin pan with cupcake liners and preheat the oven to 350 degrees F.
  2. Beat the sugars, eggs, oil and vanilla together in a bowl. You can even just do this with a whisk by hand.
  3. Stir in the freshly shredded carrots.
  4. Add the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves, stirring until everything is combined. I find that if I sprinkle the spices over the batter, I can avoid whisking everything in a separate bowl. Just don’t dump them in clumps or you might end up with one cupcake getting all the cloves.
  5. Divide evenly between the 12 cupcake liners, filling each about 3/4 full.
  6. Bake for 18-22 minutes, just until the tops of the cupcakes bounce back to the touch or a toothpick inserted into the center of a cupcake comes out clean with just a few crumbs. Cool completely before frosting.

A collage of images showing how to make carrot cake cupcakes.

Make the frosting

  1. Here’s where you whip out the hand mixer to beat softened cream cheese and butter together until light and creamy.
  2. Add the powdered sugar and vanilla and mix just until combined and smooth. Don’t overmix this frosting as it tends to lose it’s structure the more you beat it.
  3. Transfer to a piping bag fitted with a decorative tip and frost the completely cooled cupcakes. Sprinkle with a few chopped pecans for decoration and crunch.

An image of homemade carrot cake cupcakes with cream cheese frosting.

How to store carrot cake cupcakes

You can keep these cupcakes on the counter in an airtight container for 1-2 days, even though there is cream cheese frosting because the sugar in the frosting helps preserve it. Any longer than that and I recommend storing them in the refrigerator where they will keep for 5-7 days.

You can also make the cupcakes in advance and freeze them plain for up to 3 months.

Fresh taste with all the fresh flavors from vegetables and tomatoes makes this salad filled with so much flavor. Every bite has an incredible taste and crunch! Fill your bowl with this heart healthy and delicious asparagus salad! The blend of each of these ingredients together is overwhelming and amazingly delicious. You can’t go wrong with this salad on the table.

This salad features fresh cut asparagus, washed spinach, crunchy radish, sliced juicy tomatoes and peas. All drizzled with a homemade lemon vinaigrette salad dressing that is light and tasty. Asparagus salad is a quick and easy salad that comes together within minutes and can be served for any occasion. Have it as a side or a main dish for a at home meal or a barbecue. Your family will be loving all the fresh flavors in their bowl!

The Salad Ingredients:

  • Asparagus: Take a bunch, wash and cut into thirds.
  • Spinach: Wash and spin dry using this Salad Spinner
  • Radish: Crunchier the better! Slice these into thin slices.
  • Cherry Tomatoes: Sliced in half for a juicy bite.
  • Peas: These can be thawed peas or fresh.
  • Red Onion: Slice and toss into the salad
  • Feta Cheese: Sprinkle and crumble at the same time into the salad.

The Dressing Ingredients:

Lemon Vinaigrette:

  • Olive Oil: This does keep the dressing separated. Quick shake and the dressing will be mixed together again.
  • Lemon: Juice: A fresh lemon is best but lemon juice works well too.
  • Apple Cider Vinegar: Give it a sweet and tangy taste in the dressing.
  • Salt and Pepper: To taste!

How to Make Fresh Asparagus Salad:

  1. Cook asparagus: In a large pot boil the asparagus for 3-5 minutes.  Rinse in cold water.
  2. Toss salad ingredients: In a large bowl combine spinach, radish, cherry tomatoes, peas, onion, and feta cheese.
  3. Making the dressing: In a small bowl whisk together olive oil, lemon juice, vinegar, salt and pepper.
  4. Mix together: Pour the desired amount of dressing over the salad and mix together.

The Recipe Critic Pro Tip:

If you are making this ahead of time, do not add in tomatoes or the feta cheese. Once ready to serve add in as well as pouring the dressing overtop.

Taking Care of Vegetables:

Asparagus are fresh, flavorful and have that perfect texture that you just want to keep eating. There are a few ways to cook asparagus and one of the ways is steaming it. Using a large pot is what I prefer and a quicker way to cook the asparagus. If possible, standing up the asparagus is best and will help protect the tender tops of the asparagus while being cooked. Having the large pot will also help the asparagus to stay spread out and have room to tenderize but not become mushy.

Drain the water and rinse the asparagus with cold water helping the asparagus stay firm yet tender. This process only takes about a few minutes to prepare and the asparagus will be ready to add to the salad.

Asparagus being washed with cold water in a strainer.

Tips for Making the Best Salad:

  • Asparagus: Boiling water does not take long to cook the asparagus. Just 1 to 2 minutes stirring occassinsaly will sometimes be enough. It is best just to barely heat the asparagus or it will become limp and mushy.
  • Protein: Add in chicken, pork or beef into the salad. Even salmon or tuna fish are a great combination as well.
  • Egg: Boiled egg does add some extra flavor and soft texture to this asparagus salad.
  • Healthy: As a side note and fun tip, this salad is naturally vegetarian and gluten free. Keep up the great work eating healthy!
  • Beans: Add in beans like pinto or black beans for another variation.

All the ingredients separated in a bowl with the lemon vinaigrette being poured over top.
