Ingredients to Make Chicken in the Instant Pot

  • Chicken Breasts: You can use frozen or fresh for this recipe.
  • Garlic Powder: This adds a slight hint of flavor.

  • Chicken Broth: The Instant Pot always needs at least a cup of liquid in it to work properly. The chicken broth is great because it adds to that delicious and juicy flavor.

How to Make Shredded Chicken in the Instant Pot

Trust me when I say that you will use this recipe over and over again. This shredded chicken is the best to have on hand because you can use it in basically any recipe. You will love how easy it is to make.

  1. Add Rub: Rub the chicken with garlic powder, paprika, salt and pepper.
  2. Put Broth in Instant Pot: Add the chicken broth to the bottom of you instant pot.
  3. Add Chicken and Cook: Place the chicken into the instant pot. Set the instant pot in the sealing position and cook on high pressure for 10 minutes. (The instant pot will take about 10 minutes to get to the temperature and then the timer will start.
  4. Instant Release: When the chicken is done, release the pressure and carefully open the lid. Shred the chicken with two forks.

When is Chicken Fully Cooked?

Safety first! When you are cooking meat, it’s always a good idea to make sure that it’s cooked all the way through before you eat it. Use an internal meat thermometer to check and see when it’s done. Chicken is safe to eat when it reaches 165 degrees Fahrenheit.

How to Freeze Shredded Chicken

Shredding your instant pot chicken and freezing it for later is a great way to ensure that you have this on hand for every recipe that might call for it! So make a few batches and stick them in your freezer!

  • Cool and Divide: Once your chicken has cooled down then you can divide it into portions. I like to do about 2 cups when I freeze chicken because I find that most recipes will call for that amount or a little bit less. Put each portion in a plastic bag, seal it up and write the date on it. Place it in your freezer. I like to lay mine flat so that it takse up less room.
  • Thaw: When you know that you will need your chicken, you can thaw it overnight in the fridge and it will be ready to go the next day!
  • How long does froen chicken last? This shredded instant pot chicken will last about 4 months in your freezer!

Wedge salads are the best! It is simple yet full of flavor and crisp and fresh. Just like a salad should be. No one knows where these delightful salads came from, but they seem to have come into major popularity ever since steak houses started putting them on the menu. Trust me. I’m not complaining! It has become my go-to salad over the years, and it can be switched up with different toppings and dressings every time! Such a simple salad, but with such huge flavor.

It can be served on its own or as an accompaniment to your favorite dishes. Its unique shape and color will draw attention, and the taste will pull them in. Serve wedge salad alongside beef, chicken, pork, or fish. This simple wedge of iceberg lettuce has been transformed into a fancy and delicious salad! Your whole family is going to love it!

What You Need For The Perfect Wedge Salad

Look for fresh lettuce and tomatoes to help this salad taste its best. Heads of lettuce can vary in size, so pick accordingly. Depending on how many you are serving then you may need to buy more than one. Some heads are so small that it will work best to cut them in half or just thirds instead of quarters. See the recipe card at the bottom of the post for exact measurements.

  • Iceberg Lettuce: Do not substitute for something else. Icebergs shape is what gives the classic wedge its name.
  • Tomato: I used a Roma tomato! Choose a firm, full flavored tomato. If you have homegrown tomatoes, use those instead! That flavor cannot be beat!
  • Bacon: Precook your bacon or get some real bacon bits at the store to make this really easy on yourself!
  • Red Onion: Finely chop up the onion so that you get some in every bite!
  • Blue Cheese Dressing: You can use store-bought but if you want an insanely delicious flavor then try this homemade blue cheese dressing.
  • Blue Cheese Crumbles: Use more or less depending on your taste.

Putting a Wedge Salad Together

This amazing wedge salad is so easy! The fact that it is so easy to make and yet so fancy to eat makes it a choice salad! You will love how fast it is to throw together, and voila! Your salad is done!

  1. Lettuce: Cut the lettuce wedge in half and cut off the stem. Then, cut into four equal wedges.
  2. Top it: Top with chopped tomato, bacon, onion, homemade blue cheese dressing and crumbles.

Easy Tips

With this being one of the easiest salads to throw together, there isn’t much that can go wrong. But you can always do a few things to make it the easiest and best wedge salad ever.

  • Lettuce: You can prep your salad in advance. Then, you can cut the iceberg lettuce into wedges BUT leave the stem on. This will keep the leaves intact better. Wash the quarters carefully, allowing water to run in between the leaves. Drain it well and then store it in a plastic bag with a paper towel until ready to use. Lettuce will keep like this for up to 2 weeks. If the outside leaves start to turn brown then you can simply remove them. Cut off the stem right before serving.
  • Tomatoes: Use grape or cherry tomatoes halved or quartered for easy, flavorful tomato flavor.
  • Salt and Pepper:  Add some salt and pepper to taste.

Topping Ideas

The classic topping for a wedge salad is bacon, tomato, red onion, and more blue cheese along with blue cheese dressing. But that doesn’t mean you cannot take a wedge of iceberg lettuce and make it your own. Wedge salads are easily customizable and still will be absolutely delicious.

  • Add Different Vegetables: Try avocados, cucumbers, olives and chopped peppers or celery.
  • Add Crunch:  Use croutons to add a bit of crunch. If you want to go the extra mile then you can make your own croutons using this recipe.
  • Cheese: If you want to try a different cheese then try cheddar, feta, parmesan or gorgonzola.
  • Not a fan of Blue Cheese Dressing: Although blue cheese is the standard, you can substitute for ranch, caesar or creamy parmesan dressing.
  • Add Some Protein: Add chopped grilled chicken or steak. Or dice up hard boiled eggs.

I love using pork tenderloin for dinner because it’s inexpensive and nice and lean! Plus, if you cook it properly, it’s juicy and fork-tender. You really can’t go wrong! It’s a super easy pork cut to cook, and cooking it in your Instant Pot simplifies the process even more. If you’ve got pork tenderloin, chicken stock, and a few simple spices, you can make this tasty dinner. Honestly, with how juicy and hearty it is, it makes normal weekdays seem like a holiday!

This amazing Instant Pot pork tenderloin is seasoned with the best combination of garlic, brown sugar, chili powder, and fresh herbs. It’s a little bit sweet, a little bit savory, with the best hint of spice! I love this recipe because it is one of the few meat dishes I can get my youngest to eat (aside from chicken nuggets). And as for the rest of my family, it’s one of our favorites! So tender and flavorful! Whip this up with some 5-minute steamed asparagus and you’ve got a winning dinner on your hands!

What Do I Need to Make it?

Not only is this tenderloin a breeze to make, but you only need a few basic ingredients to season it! Time to pull out your spice rack and make this tasty, tender meal your whole family will love! Measurements for each ingredient can be found below in the printable recipe card.

  • Pork Tenderloin: You’ll need about 2 pounds of pork tenderloin with the silver skin removed. See tips below on what this is and why it’s important to remove it!
  • Olive Oil: Helps all of the seasonings to stick.
  • Minced Garlic: Minced garlic is the base flavoring for your Instant Pot pork tenderloin. It gives it a great savory flavor!
  • Brown Sugar: Next, we have brown sugar! I like adding this in for a hint of smoky sweetness.
  • Chili Powder: Adding a bit of chili powder is great because it gives your pork a warm heat without being too spicy. Of course, if you’re wanting more spice, add more to taste!
  • Cumin: Cumin is warm and nutty, perfect for seasoning meat!
  • Onion Powder: For a punch of sharp flavor!
  • Dried Thyme: You can’t go wrong adding fresh herbs to your pork. The aromatics make all the difference!
  • Kosher Salt: I like using kosher salt over regular table salt because it has a chunkier grain.
  • Low-Sodium Chicken Stock: Chicken stock adds moisture and helps to flavor your tenderloin while it cooks. I like to use low-sodium chicken stock as a healthier option.

Picking the Perfect Pork Tenderloin

I recommend choosing a pork tenderloin with consistent marbling all throughout the cut. These streaks of fat ensure that your meat will be nice and tender when cooked.

Note: Cooking times may vary depending on the size and thickness of the pork tenderloin you choose. Always make sure that the internal temperature of your tenderloin has reached 145 degrees Fahrenheit before serving.

How to Cook Pork Tenderloin in Instant Pot

A hearty, home-cooked dinner in 30 minutes- what could be better?! Your Instant Pot transforms an ordinary tenderloin into a juicy masterpiece in a snap. It’s the kind of easy recipe to come back to over and over again!

  1. Pat Dry: To prepare the pork tenderloin, pat the meat dry using paper towels.
  2. Prepare Rub: In a small bowl, whisk together the olive oil, garlic, brown sugar, chili powder, cumin, onion powder, thyme, and salt.
  3. Season Tenderloin: Generously rub the meat with the seasonings on both sides. Allow the tenderloin to sit on the counter for 15 minutes to marinate and come to room temperature before cooking.
  4. Sear: Turn Instant Pot on, and select the Sauté setting. Add 1 tablespoon olive oil to the bottom of the Instant Pot. Add the tenderloin and sear until browned on all sides, about 5-7 minutes.
  5. Remove: Next, remove the tenderloin from the instant pot and set aside.
  6. Add Chicken Stock: Select the off setting on the instant pot. Add the chicken broth. Using a wooden spoon, stir and scrape any browned bits from the bottom of the pot.
  7. Replace Tenderloin: Add the trivet to the pot, and place the browned tenderloin on top.
  8. Cook: Place the lid on the pot, and make sure it is on seal. Select high pressure for 1 minute. Yes, 1 minute! It will take 8-10 minutes to come up to pressure, 1 minute to cook, and about 5 minutes to release the pressure.
  9. Check Temperature: You can check the temperature of the meat using a probe. Pork should be at least 145ºF. If needed, you can seal the lid back on the instant pot and continue to cook in the residual heat for a couple of minutes.
  10. Rest: Allow the meat to sit for 5 minutes before slicing!

Tenderloin Tips and Tricks

Once you try this Instant Pot pork tenderloin, I’m sure you’ll love it as much as I do! Tenderloin has quickly become one of my favorite cuts of pork. I always use these easy tips to ensure it tastes amazing every time.

  • Remove Silver Skin: Most store-bought pork tenderloin comes with silver skin removed, but if you notice yours is covered with a whitish-gray film, that means it still has this connective tissue attached. I remove it by running a small knife underneath it. Don’t skip this step! When cooked, silver skin can make the outside of your tenderloin tough.
  • Be Careful Not to Overcook: Because pork tenderloin is so lean, it can be overcooked pretty easily. Always use a thermometer to check if yours has reached an internal temperature 145 degrees Fahrenheit. Cooking beyond that can make your tenderloin dry.
  • Let Rest: Those 5 minutes at the end of the recipe are super important! Giving your tenderloin time to rest allows liquids to reabsorb, meaning you’ll have a juicier, more tender cut of meat!

Storing Leftovers

You can store your tenderloin for a few days after cooking. Heat it up in your Instant Pot and it tastes as good as new!

  • In the Refrigerator: Either in an airtight container or wrapped in plastic wrap, your Instant Pot pork tenderloin will keep for up to 4 days.
  • Reheating: You can reheat your pork tenderloin in an Instant Pot! Add ¼ cup of water or chicken stock and place leftover tenderloin on trivet. Cook for 3-4 minutes or until internal temperatures reach 145 degrees.
